Ingredients
For the Chicken & Broccoli
- 1½ lbs boneless, skinless chicken breast, cut into bite-size pieces
- 5 cups fresh broccoli florets
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 3 green onions, sliced
- Nonstick cooking spray
- Salt and black pepper, to taste
For the Extra-Saucy Stir-Fry Sauce
- ½ cup reduced-sodium soy sauce
- 1 cup reduced-sodium chicken broth
- 3 tbsp rice vinegar
- 2 tbsp zero-calorie brown sugar substitute
- 1 tbsp oyster sauce
- 2 tsp toasted sesame oil
- 2 tbsp cornstarch
- ½ tsp garlic powder
- ¼ tsp crushed red pepper flakes, optional
Instructions
- In a bowl, whisk together the soy sauce, chicken broth, rice vinegar, brown sugar substitute, oyster sauce, sesame oil, cornstarch, garlic powder, and red pepper flakes until smooth.
- Spray a large skillet or wok generously with nonstick cooking spray and heat over medium-high heat.
- Season the chicken lightly with salt and black pepper.
- Add the chicken and cook for 5–7 minutes, stirring occasionally, until golden brown and cooked through.
- Transfer the chicken to a plate while you cook the broccoli.
- Add the broccoli to the same skillet along with ¼ cup water. Cover and steam for about 3 minutes.
- Remove the lid and add the garlic and ginger. Stir-fry for another 1–2 minutes so the broccoli stays bright green with a little bite.
- Return the chicken to the skillet.
- Whisk the sauce again and pour it over the chicken and broccoli.
- Cook for 2–4 minutes, stirring frequently, until the sauce bubbles, thickens, and gives everything that glossy coating.
- If you really like plenty of sauce for leftovers, add another ¼–½ cup chicken broth at the end. Let it simmer for another minute so it stays saucy without becoming watery.
- Finish with sliced green onions and serve hot.

I’m definitely on team extra sauce with this one. The first time I made it, there was just enough to coat everything, but by the next day the leftovers had soaked most of it up. Now I make a bigger batch of sauce and leave a little extra in the skillet. It keeps the chicken much better when reheated, and that glossy sauce over the broccoli is honestly my favorite part anyway.
