Strawberry Cheesecake Soft Serve

This is thick, creamy vanilla soft serve with a bright strawberry swirl, very close to the cup in the photo. The strawberry sauce stays a little chunky and syrupy so you get that pretty red-and-white swirl without adding many Points. 😍

Ingredients

For the soft serve

  • 1½ cups fat-free plain Greek yogurt — 0 Points
  • ½ cup fat-free cottage cheese, blended completely smooth — 0 Points
  • 2 tbsp sugar-free cheesecake or vanilla pudding mix — about 1 Point
  • 2–3 tbsp zero-calorie sweetener — 0 Points
  • 1 tsp vanilla extract — 0 Points
  • 1–1½ cups ice — 0 Points
  • 2–3 tbsp unsweetened almond milk, only as needed — 0 Points

For the strawberry swirl

  • 1 cup fresh or frozen strawberries, chopped — 0 Points
  • 1 tbsp zero-calorie sweetener — 0 Points
  • 1 tsp lemon juice — 0 Points
  • 1 tbsp sugar-free strawberry preserves — about 0–1 Point

Instructions

  1. Add the strawberries, sweetener, and lemon juice to a small saucepan.
  2. Cook for 4–5 minutes, lightly crushing some of the berries while leaving plenty of pieces intact.
  3. Stir in the sugar-free strawberry preserves and let the sauce cool completely.
  4. Blend the cottage cheese until silky smooth.
  5. Add Greek yogurt, pudding mix, sweetener, vanilla, ice, and just enough almond milk to get the blender moving.
  6. Blend until very thick and smooth like soft serve.
  7. Spoon some strawberry sauce around the inside of a clear cup.
  8. Add the vanilla soft serve, layering in more strawberry sauce as you go.
  9. Finish with a generous spoonful of strawberry sauce over the top and lightly swirl it through with a spoon.
