Ingredients:
- 8 oz pasta of your choice (e.g., bow tie or penne)
- 1 cup cooked shrimp
- 1 cup mixed seafood (e.g., scallops, mussels, crab)
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- Optional: garlic powder, paprika
Instructions:
- Cook pasta according to package directions. Drain and set aside.
- In a large bowl, combine cooked pasta, seafood, cherry tomatoes, cucumber, and red onion.
- In a small bowl, whisk together olive oil and lemon juice.
