Ingredients
- 1 cup sweet potato, cut into small thin pieces — 4 Points
- 4 large eggs — 0 Points
- ¾ cup liquid egg whites — 0 Points
- ½ cup fat-free cottage cheese, blended smooth — 0 Points
- ¼ cup fat-free shredded mozzarella — 0–1 Point
- 2 tbsp unsweetened almond milk — 0 Points
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper, to taste
- 1 tsp black sesame seeds — 1 Point
- Cooking spray — 0 Points
Instructions
- Preheat the oven or air fryer to 375°F (190°C).
- Cut the sweet potato into small, thin irregular pieces like the ones shown.
- Microwave the sweet potato for 2–3 minutes first, just until slightly tender. This helps it cook completely without needing oil.
- Whisk together the eggs, egg whites, almond milk, seasonings and blended cottage cheese until smooth.
- Fold in the mozzarella and most of the sweet potato pieces.
- Line a 7-inch round baking dish or air-fryer pan with parchment paper and lightly spray it.
- Pour in the egg mixture and arrange the remaining sweet potato pieces across the top.
- Sprinkle with black sesame seeds.
- Air fry at 350°F (175°C) for 18–22 minutes, or bake at 375°F (190°C) for 25–30 minutes, until puffed, set and beautifully golden.
- Rest for 5 minutes before slicing.
