Point Sweet Potato Egg Bake

Golden on top, soft and creamy inside, with roasted sweet potato pieces throughout and a sprinkle of black sesame. This makes a really satisfying WW-friendly breakfast or light lunch while still looking like the one pictured. 😍

Ingredients

  • 1 cup sweet potato, cut into small thin pieces — 4 Points
  • 4 large eggs — 0 Points
  • ¾ cup liquid egg whites — 0 Points
  • ½ cup fat-free cottage cheese, blended smooth — 0 Points
  • ¼ cup fat-free shredded mozzarella — 0–1 Point
  • 2 tbsp unsweetened almond milk — 0 Points
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • 1 tsp black sesame seeds — 1 Point
  • Cooking spray — 0 Points

Instructions

  1. Preheat the oven or air fryer to 375°F (190°C).
  2. Cut the sweet potato into small, thin irregular pieces like the ones shown.
  3. Microwave the sweet potato for 2–3 minutes first, just until slightly tender. This helps it cook completely without needing oil.
  4. Whisk together the eggs, egg whites, almond milk, seasonings and blended cottage cheese until smooth.
  5. Fold in the mozzarella and most of the sweet potato pieces.
  6. Line a 7-inch round baking dish or air-fryer pan with parchment paper and lightly spray it.
  7. Pour in the egg mixture and arrange the remaining sweet potato pieces across the top.
  8. Sprinkle with black sesame seeds.
  9. Air fry at 350°F (175°C) for 18–22 minutes, or bake at 375°F (190°C) for 25–30 minutes, until puffed, set and beautifully golden.
  10. Rest for 5 minutes before slicing.
