Ham, Mozzarella & Pesto Panini

Crispy toasted bread, layers of smoky ham, gooey melted cheese, and a bright basil-pesto spread — made lighter while keeping that thick, melty panini look from the photo. 😍

Ingredients

  • 1 light ciabatta-style or high-fiber sandwich roll — 2 Points
  • 3 oz extra-lean deli ham — 0–1 Point
  • ⅓ cup fat-free shredded mozzarella — 0–1 Point
  • Cooking spray — 0 Points

For the Low-Point Pesto Spread

  • 2 tbsp fat-free Greek yogurt — 0 Points
  • 2 tbsp finely chopped fresh basil — 0 Points
  • 1 tsp grated Parmesan — 1 Point
  • ½ tsp minced garlic
  • ½ tsp lemon juice
  • Salt & black pepper

Instructions

  1. Mix the Greek yogurt, basil, Parmesan, garlic, lemon juice, salt, and pepper to make a thick pesto-style spread.
  2. Slice the roll in half and spread the pesto mixture generously over both cut sides.
  3. Layer the ham thickly over the bottom half.
  4. Add the mozzarella, making sure it reaches almost to the edges so you get that big melted-cheese layer.
  5. Close the sandwich and lightly mist the outside with cooking spray.
  6. Cook in a panini press or grill pan over medium heat for 4–6 minutes, pressing gently, until the bread is deeply toasted and the cheese is completely melted.
  7. Slice in half while hot for that gooey center. 🤤
