• 3 large russet potatoes (peeled if desired)
• 2–3 tbsp olive oil
• 2–3 cloves garlic, minced
• 1/2 tsp salt (or to taste)
• 1/4 tsp black pepper
• 1/2 tsp dried oregano or Italian seasoning
• 1/2 tsp paprika (optional for color)
• 1/2 cup grated Parmesan cheese
• 1 tbsp chopped parsley (optional for garnish)
• Ketchup or your favorite dip (for serving)

Instructions:
- Prepare the Potatoes:
- Wash and cut potatoes into thin strips (like classic fries).
- Soak the cut fries in cold water for at least 30 minutes to remove excess starch (helps make them crispier).
- Drain and pat dry thoroughly using paper towels.
- Preheat & Prep:
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper or lightly grease it.
- Season the Fries:
- In a large bowl, toss the dried fries with olive oil, garlic, salt, pepper, oregano (or Italian seasoning), and paprika (if using).
- Spread them out in a single layer on the baking sheet. Avoid overcrowding for even baking.
- Bake:
- Bake for 20 minutes, flip the fries, and bake for another 15–20 minutes or until golden brown and crisp.
- Add Parmesan & Garnish:
- Immediately after removing from the oven, sprinkle grated Parmesan over the hot fries and toss to coat.
- Optionally, sprinkle with chopped parsley for color and freshness.
- Serve:
Serve hot with ketchup, garlic aioli, or ranch dressing.
