These little pancake bites are colorful, fun, and surprisingly light. Kodiak mix adds protein, Fruity Pebbles bring the crunch, and a drizzle of sugar-free syrup ties it all together. Perfect for a quick breakfast or sweet snack.

  • 1โ€“1ยฝ cups Kodiak Cakes pancake mix
  • ยพ cup water (adjust as needed)
  • 1 cup Fruity Pebbles
  • Sugar-free maple syrup, for serving
  • Cooking spray

  1. Preheat oven to 350ยฐF (175ยฐC). Spray a mini muffin tin.
  2. Whisk Kodiak mix and water until smooth and thick.
  3. Fold in ยฝ cup Fruity Pebbles, saving the rest for topping.
  4. Fill each mini muffin cup about ยพ full.
  5. Add a pinch of Fruity Pebbles on top of each.
  6. Bake 10โ€“12 minutes, until golden and cooked through.
  7. Cool slightly and remove from the tin.
  8. Drizzle with sugar-free syrup.
