These frozen brownie sandwiches taste like a real dessert but stay light thanks to applesauce, Greek yogurt, cocoa, and a fluffy whipped filling. Soft, fudgy, and perfect straight from the freezer.
⭐ Ingredients
Brownie Layer
- ½ cup unsweetened applesauce
- ¼ cup nonfat Greek yogurt
- ⅓ cup unsweetened cocoa powder
- ½ cup zero-calorie sweetener
- 1 egg
- ⅓ cup whole-wheat or oat flour
- 1 tsp vanilla extract
- Pinch of salt
Ice Cream Filling
- 1½ cups light whipped topping
- Optional: ½ scoop vanilla or chocolate protein powder (adds structure)
🥣 Instructions
- Heat oven to 350°F (175°C). Line an 8×8 or 9×9 pan with parchment.
- Mix all brownie ingredients until smooth. Spread evenly in the pan.
- Bake 12–15 minutes, just until set. Cool completely.
- Lift brownie out and cut in half.
- Mix whipped topping with protein powder if using. Spread over one half.
- Top with the other half to form a sandwich slab.
- Freeze 2–3 hours until firm.
- Slice into 8 sandwiches.
