Brownie Ice Cream Sandwiches

These frozen brownie sandwiches taste like a real dessert but stay light thanks to applesauce, Greek yogurt, cocoa, and a fluffy whipped filling. Soft, fudgy, and perfect straight from the freezer.


⭐ Ingredients

Brownie Layer

  • ½ cup unsweetened applesauce
  • ¼ cup nonfat Greek yogurt
  • ⅓ cup unsweetened cocoa powder
  • ½ cup zero-calorie sweetener
  • 1 egg
  • ⅓ cup whole-wheat or oat flour
  • 1 tsp vanilla extract
  • Pinch of salt

Ice Cream Filling

  • 1½ cups light whipped topping
  • Optional: ½ scoop vanilla or chocolate protein powder (adds structure)

🥣 Instructions

  1. Heat oven to 350°F (175°C). Line an 8×8 or 9×9 pan with parchment.
  2. Mix all brownie ingredients until smooth. Spread evenly in the pan.
  3. Bake 12–15 minutes, just until set. Cool completely.
  4. Lift brownie out and cut in half.
  5. Mix whipped topping with protein powder if using. Spread over one half.
  6. Top with the other half to form a sandwich slab.
  7. Freeze 2–3 hours until firm.
  8. Slice into 8 sandwiches.
