Ingredients
- 12 oz lean turkey sausage, casings removed
- 3 cups russet potatoes, thinly sliced or diced
- 5 cups fresh kale, chopped
- 1½ cups mushrooms, sliced
- 1 small onion, diced
- 3 cloves garlic, minced
- 5 cups fat-free low-sodium chicken broth
- 1½ cups unsweetened almond milk
- ¾ cup plain nonfat Greek yogurt
- 2 tbsp light cream cheese
- 2 slices center-cut bacon, cooked and crumbled
- ½ tsp Italian seasoning
- ¼ tsp crushed red pepper flakes
- ½ tsp black pepper
- Salt, to taste

Instructions
- Spray a large soup pot with cooking spray and heat over medium-high heat.
- Add the turkey sausage and cook, breaking it into small crumbles, until browned.
- Add onion, garlic, and mushrooms. Cook for another 4–5 minutes until softened.
- Pour in the chicken broth and add the potatoes, Italian seasoning, red pepper flakes, and black pepper.
- Bring to a gentle boil, then reduce heat and simmer for 12–15 minutes, until the potatoes are fork-tender.
- Add the chopped kale and cook for another 4–5 minutes until wilted but still bright green.
- Reduce the heat to low. Stir in the almond milk and light cream cheese.
- Place the Greek yogurt in a bowl and whisk in about ½ cup of the warm broth. Slowly stir this mixture back into the soup. This keeps the yogurt creamy instead of curdling.
- Add the crumbled bacon and gently simmer for another 2–3 minutes. Don’t let it rapidly boil after adding the yogurt.
- Taste, adjust the seasoning, and serve hot.
