Creamy Peanut Butter Mousse

This is for the nights when you want to eat peanut butter straight from the jar 😂🥜 Thick, fluffy, creamy, and full of peanut butter flavor—but made with PB2 and Greek yogurt so you get a seriously satisfying bowl without spending a ton of WW Points.

Ingredients

  • 1½ cups plain nonfat Greek yogurt
  • ½ cup fat-free or sugar-free whipped topping, thawed
  • â…“ cup PB2 powdered peanut butter
  • ½ package sugar-free vanilla or cheesecake instant pudding mix
  • 2–3 tablespoons unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons zero-calorie sweetener, to taste
  • Pinch of salt

Optional Toppings

  • Extra PB2 dusted on top
  • Sugar-free chocolate syrup
  • Fat-free whipped topping
  • A few crushed peanuts (will add Points)

Instructions

  1. Add the Greek yogurt, PB2, pudding mix, vanilla, sweetener, and a pinch of salt to a mixing bowl.
  2. Beat with a hand mixer for about 1–2 minutes until thick and completely smooth.
  3. Add almond milk 1 tablespoon at a time until you get a creamy mousse consistency.
  4. Gently fold in the whipped topping. Don’t overmix—you want to keep all that fluffy texture.
  5. Divide between 4 small bowls.
  6. Refrigerate for at least 30 minutes. It gets noticeably thicker and creamier as it chills.
  7. Give it a little swirl with a spoon before serving for that thick peanut-butter-mousse look.
