Ultra Low-Point WW-Friendly Version
This keeps that old-school creamy potato salad look — tender potatoes coated in a thick dressing with plenty of sliced eggs across the top and a generous sprinkle of paprika. The trick is replacing most of the mayo with Greek yogurt while keeping just enough light mayo for that classic flavor.

Ingredients
- 1½ lbs Yukon Gold or russet potatoes, peeled and cubed
- 5 large hard-boiled eggs
- ¾ cup plain nonfat Greek yogurt
- 2 tbsp light mayonnaise
- 1 tbsp yellow mustard
- 1 tbsp pickle juice
- ½ cup celery, finely diced
- ¼ cup red onion, finely diced
- ¼ cup dill pickles or sweet pickles, finely chopped
- 1 tsp apple cider vinegar
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp black pepper
- Salt, to taste
- Paprika, for topping
Instructions
- Place the potatoes in a large pot, cover with cold salted water and bring to a boil. Cook for 10–12 minutes, until fork-tender but not falling apart.
- Drain well and allow the potatoes to cool.
- Chop 2 of the hard-boiled eggs and reserve the remaining 3 for the topping.
- In a large bowl, whisk together Greek yogurt, light mayo, mustard, pickle juice, vinegar, garlic powder, onion powder, salt and pepper.
- Add the potatoes, chopped eggs, celery, onion and pickles.
- Gently fold everything together until the potatoes are generously coated in the creamy dressing. Lightly mash a few potato pieces while mixing if you like that extra-creamy classic texture.
- Transfer to a large serving bowl and smooth out the top.
- Slice the remaining 3 eggs into rounds and arrange them generously over the salad, just like the classic version.
- Finish with plenty of paprika.
- Refrigerate for at least 1 hour before serving.
