Ingredients
- ¾ cup fat-free plain Greek yogurt — 0 Points
- 2 tbsp sugar-free chocolate pudding mix — 1–2 Points
- 1½ tbsp unsweetened cocoa powder — 0 Points
- 2 tbsp sugar-free chocolate chips, melted — 2 Points
- ½ cup puffed rice cereal — 1–2 Points
- 2–3 tbsp zero-calorie sweetener — 0 Points
- ½ tsp vanilla extract — 0 Points
- Tiny pinch of salt
Instructions
- Melt the sugar-free chocolate chips until smooth.
- Mix the Greek yogurt, pudding mix, cocoa powder, sweetener, vanilla and salt until thick and completely creamy.
- Stir in the melted chocolate.
- Gently fold in the puffed rice cereal so the little crispy pieces stay intact and visible throughout.
- Spoon the mixture into 8 small round silicone molds, keeping them fairly thin like the piece in the photo.
- Smooth the tops and freeze for 2–3 hours, until completely firm.
- Remove from the molds and keep frozen.
- Let one sit for about 2–3 minutes before eating for the best creamy-but-firm chocolate texture.
