Cheesy Philly Cheesesteak Casserole

This one has all the good parts of a Philly cheesesteak—savory beef, peppers, onions, mushrooms, and plenty of melty cheese—turned into an easy casserole. It comes out cheesy and hearty like the photo, but using extra-lean beef and lighter cheese keeps the Points surprisingly low.

Ingredients

  • 1 lb 96% lean ground beef
  • 1 large green bell pepper, diced
  • 1 medium onion, diced
  • 1 cup mushrooms, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • ½ cup plain nonfat Greek yogurt
  • 2 tablespoons light cream cheese
  • Âľ cup fat-free shredded mozzarella
  • ½ cup reduced-fat shredded cheddar
  • 2 large eggs
  • ÂĽ cup unsweetened almond milk
  • Cooking spray

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly coat a 9×13-inch baking dish with cooking spray.
  2. Brown the ground beef in a large skillet over medium-high heat, breaking it into small crumbles.
  3. Add the bell pepper, onion, mushrooms, and garlic. Cook for another 5–6 minutes, until the vegetables begin to soften.
  4. Stir in Worcestershire sauce, onion powder, garlic powder, paprika, salt, and pepper.
  5. Reduce the heat and stir in the Greek yogurt and light cream cheese until everything becomes creamy.
  6. In a small bowl, whisk together the eggs and almond milk.
  7. Transfer the beef mixture to the prepared baking dish and spread evenly.
  8. Pour the egg mixture evenly over the casserole.
  9. Sprinkle the mozzarella and cheddar across the entire top so you get that bubbly, cheesy finish.
  10. Bake uncovered for 20–25 minutes, until the casserole is set and the cheese is melted and golden.
  11. Let rest for 5–10 minutes before cutting into 6 portions.
