Ingredients
- ½ cup tapioca flour — 12 Points
- ¾ cup fat-free cottage cheese, blended completely smooth — 0 Points
- 1 large egg — 0 Points
- ¼ cup fat-free shredded mozzarella — 0–1 Point
- 2 tbsp grated Parmesan — 2 Points
- ½ tsp baking powder
- ¼ tsp garlic powder
- ¼ tsp salt
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Blend the cottage cheese until completely smooth and creamy.
- Mix it with the egg, mozzarella, Parmesan, salt, and garlic powder.
- Gradually stir in the tapioca flour and baking powder until you have a soft, slightly sticky dough.
- With damp hands, shape into about 20 small round balls, keeping them similar in size to the photo.
- Arrange on the baking sheet with a little space between each one.
- Bake for 15–18 minutes, until puffed and lightly golden. Don’t overbake — the centers should stay soft and chewy.
