Berry Cheesecake Trifle

Ingredients:

  1. 500g quark (full-fat or low-fat, syn values may vary)
  2. 2 tsp  vanilla extract
  3. Sweetener to taste (e.g., granulated sweetener, liquid sweetener)
  4. 500g mixed fresh berries ( strawberries raspberries, blueberries, blackberries – use your favorites!)
  5. 6-8 wholemeal crispbreads (check Sy values, usually around 1-2 Sys each)
  6. Optional: Fresh mint leaves, for garnish

Instructions:

  1. Make the “Cheesecake” Filling: In a bowl, whisk the quark and vanilla extract together until smooth and creamy. Add sweetener to your taste, mixing well until dissolved.
  2. Prepare the “Crunch”: Roughly crumble the wholemeal crispbreads. You don’t want a fine powder, some texture is nice!
  3. Layer the Trifle: In a glass bowl or individual serving glasses, start by layering some of the crumbled wholemeal crispbreads.
  4. Spoon a layer of the “cheesecake” filling over the crispbreads.
  5. Arrange a layer of your mixed fresh berries on top of the filling.
  6. Repeat these layers (crispbreads, “cheesecake” filling, berries) until your bowl or glasses are full, finishing with a layer of berries on top.
  7. Chill & Serve: Refrigerate for at least 30 minutes to allow the flavors to meld and the trifle to chill.
    Garnish: If desired, garnish with a few extra fresh berries and a sprig of fresh mint before serving.
