Ingredients
- 4 oz dried chipped beef, sliced into thin strips
- 2 cups unsweetened almond milk
- ½ cup fat-free evaporated milk
- 2 tbsp all-purpose flour
- 1 tbsp light butter
- ½ tsp Worcestershire sauce
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp black pepper
- Pinch of paprika
- 8 slices light or low-calorie sandwich bread
- Nonstick cooking spray
- Chopped parsley, optional
Instructions
- Place the chipped beef in a colander and quickly rinse it under cool water. Pat dry with paper towels. This helps remove some of the extra salt.
- Melt the light butter in a large skillet over medium heat.
- Add the chipped beef and cook for about 1–2 minutes, just until warmed and slightly browned around the edges.
- Sprinkle the flour over the beef and stir continuously for about 1 minute.
- Slowly pour in the almond milk and evaporated milk, whisking as you add them so the sauce stays smooth.
- Add the Worcestershire sauce, garlic powder, onion powder, black pepper, and paprika.
- Reduce the heat to medium-low and cook for 4–6 minutes, stirring frequently, until the sauce becomes thick and creamy.
- If the gravy gets thicker than you like, add another splash of almond milk.
- Toast the bread until golden and crisp.
- Place 2 slices of toast on each plate and spoon a generous amount of the creamed chipped beef over the top.
- Finish with extra black pepper or a little parsley if desired.
