Brazilian Cheese Bites

These little cheese bites are soft and chewy inside with a lightly golden outside, just like classic Brazilian pão de queijo — but this version is much lighter and WW-friendly. 😍 They’re perfect warm straight from the oven!

Ingredients

  • ½ cup tapioca flour — 12 Points
  • ¾ cup fat-free cottage cheese, blended completely smooth — 0 Points
  • 1 large egg — 0 Points
  • ¼ cup fat-free shredded mozzarella — 0–1 Point
  • 2 tbsp grated Parmesan — 2 Points
  • ½ tsp baking powder
  • ¼ tsp garlic powder
  • ¼ tsp salt

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese until completely smooth and creamy.
  3. Mix it with the egg, mozzarella, Parmesan, salt, and garlic powder.
  4. Gradually stir in the tapioca flour and baking powder until you have a soft, slightly sticky dough.
  5. With damp hands, shape into about 20 small round balls, keeping them similar in size to the photo.
  6. Arrange on the baking sheet with a little space between each one.
  7. Bake for 15–18 minutes, until puffed and lightly golden. Don’t overbake — the centers should stay soft and chewy.
