Classic Creamy Potato & Egg Salad

Ultra Low-Point WW-Friendly Version

This keeps that old-school creamy potato salad look — tender potatoes coated in a thick dressing with plenty of sliced eggs across the top and a generous sprinkle of paprika. The trick is replacing most of the mayo with Greek yogurt while keeping just enough light mayo for that classic flavor.

Ingredients

  • 1½ lbs Yukon Gold or russet potatoes, peeled and cubed
  • 5 large hard-boiled eggs
  • ¾ cup plain nonfat Greek yogurt
  • 2 tbsp light mayonnaise
  • 1 tbsp yellow mustard
  • 1 tbsp pickle juice
  • ½ cup celery, finely diced
  • ¼ cup red onion, finely diced
  • ¼ cup dill pickles or sweet pickles, finely chopped
  • 1 tsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • Salt, to taste
  • Paprika, for topping

Instructions

  1. Place the potatoes in a large pot, cover with cold salted water and bring to a boil. Cook for 10–12 minutes, until fork-tender but not falling apart.
  2. Drain well and allow the potatoes to cool.
  3. Chop 2 of the hard-boiled eggs and reserve the remaining 3 for the topping.
  4. In a large bowl, whisk together Greek yogurt, light mayo, mustard, pickle juice, vinegar, garlic powder, onion powder, salt and pepper.
  5. Add the potatoes, chopped eggs, celery, onion and pickles.
  6. Gently fold everything together until the potatoes are generously coated in the creamy dressing. Lightly mash a few potato pieces while mixing if you like that extra-creamy classic texture.
  7. Transfer to a large serving bowl and smooth out the top.
  8. Slice the remaining 3 eggs into rounds and arrange them generously over the salad, just like the classic version.
  9. Finish with plenty of paprika.
  10. Refrigerate for at least 1 hour before serving.
