This one has all the good parts of a Philly cheesesteak—savory beef, peppers, onions, mushrooms, and plenty of melty cheese—turned into an easy casserole. It comes out cheesy and hearty like the photo, but using extra-lean beef and lighter cheese keeps the Points surprisingly low.

Ingredients
- 1 lb 96% lean ground beef
- 1 large green bell pepper, diced
- 1 medium onion, diced
- 1 cup mushrooms, chopped
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and black pepper, to taste
- ½ cup plain nonfat Greek yogurt
- 2 tablespoons light cream cheese
- Âľ cup fat-free shredded mozzarella
- ½ cup reduced-fat shredded cheddar
- 2 large eggs
- ÂĽ cup unsweetened almond milk
- Cooking spray
Instructions
- Preheat the oven to 375°F (190°C) and lightly coat a 9×13-inch baking dish with cooking spray.
- Brown the ground beef in a large skillet over medium-high heat, breaking it into small crumbles.
- Add the bell pepper, onion, mushrooms, and garlic. Cook for another 5–6 minutes, until the vegetables begin to soften.
- Stir in Worcestershire sauce, onion powder, garlic powder, paprika, salt, and pepper.
- Reduce the heat and stir in the Greek yogurt and light cream cheese until everything becomes creamy.
- In a small bowl, whisk together the eggs and almond milk.
- Transfer the beef mixture to the prepared baking dish and spread evenly.
- Pour the egg mixture evenly over the casserole.
- Sprinkle the mozzarella and cheddar across the entire top so you get that bubbly, cheesy finish.
- Bake uncovered for 20–25 minutes, until the casserole is set and the cheese is melted and golden.
- Let rest for 5–10 minutes before cutting into 6 portions.
