Strawberry Shortcake Protein Fluff

Ultra Low-Point Frozen Dessert

This is one of those ridiculously easy desserts that tastes way more indulgent than it is. Creamy strawberry cheesecake-style fluff with little crunchy shortcake pieces throughout—and after a little freezer time, it turns into something between soft-serve ice cream and strawberry cheesecake fluff. 😍

Ingredients

  • 1 container (8 oz) sugar-free or fat-free whipped topping, thawed
  • 1 cup plain nonfat Greek yogurt
  • 1 package sugar-free strawberry instant pudding mix
  • 1 scoop vanilla protein powder
  • ½ cup fresh strawberries, finely chopped
  • ¼ cup crushed high-protein cereal or low-point shortcake-style cookies
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons unsweetened almond milk, if needed

For the Top

  • 1 tablespoon crushed freeze-dried strawberries
  • 2 tablespoons crushed high-protein cereal or low-point cookies

Instructions

  1. Add the Greek yogurt, strawberry pudding mix, vanilla protein powder, and vanilla extract to a bowl.
  2. Stir until completely smooth. Add almond milk 1 tablespoon at a time if the mixture is too thick.
  3. Gently fold in the whipped topping, keeping the mixture light and fluffy.
  4. Fold in the chopped strawberries and crushed cereal or cookies.
  5. Transfer to a freezer-safe container and smooth out the top.
  6. Sprinkle with freeze-dried strawberry pieces and a little extra cookie or cereal crunch.
  7. Freeze for about 2–3 hours for a thick soft-serve texture.
  8. If frozen overnight, let it sit at room temperature for 10–15 minutes before scooping.
