Creamy Chipotle Taco Soup
Ingredients
1 lb ground beef, browned
1 can diced chipotle tomatoes
1 packet low-sodium taco seasoning
4 cups chicken broth
1 block cream cheese
Dried cilantro
Salt & pepper, to taste
Shredded cheddar, for topping
Instructions
Brown the ground beef in a pot on the stovetop; drain if needed.
Add the diced chipotle tomatoes and taco seasoning, stirring to coat the meat.
Pour in the chicken broth and bring to a gentle simmer.
Add the cream cheese and stir until fully melted and incorporated.
Season with dried cilantro, salt, and pepper to taste.
Serve hot and top with shredded cheddar.
