Ingredients:
• 1 lb cooked jumbo shrimp, chopped
• ¼ cup red onion, chopped
• 1 tomato, diced
• 1 avocado, diced
• 1 tsp extra-virgin olive oil
• Juice of 1 lime
• ¼ tsp salt
• ⅛ tsp black pepper
Instructions:
- Combine shrimp, onion, tomato, and avocado in a bowl.
- Drizzle with olive oil and lime juice.
- Season with salt and pepper.
- Toss gently to mix.
- Serve immediately or chill briefly.
Tip: Delicious over mixed greens, in lettuce cups, or with whole grain crackers!
