CHICKEN SPINACH AND MUSHROOM LOW CARB OVEN DISH


Ingredients:
1 small bag fresh baby spinach
1 dash pepper
1 dash Herb and Garlic Seasoning
8 oz shredded mozzarella cheese
6 thin-sliced chicken breasts
1 container green onion cream cheese
1/4 cup olive oil
1/2 cup chicken broth
1 large package sliced mushrooms
Instructions:
Preheat the oven to 375°F (190°C).
In a 9×13-inch pan, lay out the chicken breasts in a single layer. Top with fresh baby spinach and sliced mushrooms. Sprinkle with pepper and Herb and Garlic Seasoning.
Soften the green onion cream cheese and whisk it together with the olive oil and chicken broth until smooth. Pour this mixture evenly over the chicken, spinach, and mushrooms.
Place a piece of foil over the pan, but do not seal it. Bake in the preheated oven for 20 minutes.
Remove the foil and continue baking uncovered for another 20-25 minutes. Then, sprinkle the shredded mozzarella cheese over the top and bake uncovered for an additional 10 minutes or until the cheese starts to brown.
Let the dish cool for 10 minutes before serving.
