Zucchini Crust

Zucchini Crust

~3 WW Points per serving (makes 4 servings)

Ingredients:

  • 1 medium zucchini, grated (about 2 cups) – 0 points
  • 2 tbsp chia seeds – 4 points
  • 3 tbsp water – 0 points
  • 1/3 cup almond flour (instead of 1/2) – 6 points
  • 1 egg – 0 points
  • Spices: 1/2 tsp garlic powder, 1/2 tsp dried oregano, 1/2 tsp salt – 0 points
  • (Optional): Sprinkle of fat-free mozzarella or nutritional yeast for flavor – 0–1 point max

Instructions:

  1. Preheat oven to 375°F (190°C), line a tray with parchment.
  2. Mix chia seeds with water, let gel (10 mins).
  3. Squeeze liquid from grated zucchini.
  4. Mix everything together in a bowl.
  5. Spread thin on baking tray to form crust.
  6. Bake 20 mins, add toppings if desired, bake 10 more mins.

Total: ~12 points for the whole crust → 3 points per serving
