Zesty Ranch Chicken Cucumber Folds (WW Low-Point Lunch)

Ingredients (Low-Point Version)

  • 1 cup shredded chicken breast โ€“ 0 points
  • 3 tbsp fat-free Greek yogurt โ€“ 1 point
  • 1 tsp ranch seasoning mix โ€“ 1 point
  • A small squeeze of lemon juice โ€“ 0 points
  • 1 large cucumber, sliced into thin wide ribbons โ€“ 0 points
  • Optional: chopped fresh dill or parsley โ€“ 0 points

Instructions

  1. Mix the shredded chicken with the fat-free Greek yogurt, ranch seasoning, and lemon juice.
  2. Slice your cucumber into long, thin strips (use a vegetable peeler or mandolin).
  3. Spoon a bit of the chicken mixture on one end of each strip and fold it over into a little pocket.
  4. Chill them for 5โ€“10 minutes so the flavors come together and the folds stay firm.
