Ingredients (Low-Point Version)
- 1 cup shredded chicken breast โ 0 points
- 3 tbsp fat-free Greek yogurt โ 1 point
- 1 tsp ranch seasoning mix โ 1 point
- A small squeeze of lemon juice โ 0 points
- 1 large cucumber, sliced into thin wide ribbons โ 0 points
- Optional: chopped fresh dill or parsley โ 0 points
Instructions
- Mix the shredded chicken with the fat-free Greek yogurt, ranch seasoning, and lemon juice.
- Slice your cucumber into long, thin strips (use a vegetable peeler or mandolin).
- Spoon a bit of the chicken mixture on one end of each strip and fold it over into a little pocket.
- Chill them for 5โ10 minutes so the flavors come together and the folds stay firm.
