Zero Point “Healthy Noodle” Stir-Fry0 points – Costco favorites edition

What You’ll Need:

  • Chicken tenderloins
  • “Healthy Noodles” (Costco brand)
  • Zucchini, onion, broccoli (or any veggies you love)
  • Coconut aminos (or soy sauce)
  • Avocado oil spray
  • Sesame oil
  • Sweet Thai chili sauce
  • Salt & pepper

Instructions:

  1. Chicken: Season tenderloins with salt & pepper, spray lightly with avocado oil, and air fry at 400°F for 6 minutes. Flip and cook 4 more minutes. Slice when done.
  2. Veggies: Chop zucchini, onion, and broccoli. Sauté in coconut aminos and a small spray of avocado oil until tender-crisp.
  3. Noodles: Drain “Healthy Noodles” and warm in a pot with a splash of sesame oil, sweet Thai chili sauce, and more coconut aminos.
  4. Combine chicken, veggies, and noodles in a large bowl. Toss well and serve warm.
