Ingredients (WW Optimized)

  • 1 large egg
  • ⅓ cup fat-free shredded mozzarella
  • 1 tbsp grated Parmesan (for flavor + browning—small amount keeps points low)
  • 1 tbsp sugar-free pizza sauce (plus more for dipping)
  • 6–8 mini turkey pepperoni slices (or chopped)
  • ¼ tsp Italian seasoning
  • ¼ tsp garlic powder
  • Oil spray for waffle maker

Skip for lowest points: almond flour
(doesn’t change the look much, only texture)


Instructions

  1. Preheat mini waffle maker.
  2. Whisk the egg.
  3. Stir in mozzarella, Parmesan, pizza sauce + seasonings.
  4. Spray waffle maker.
  5. Spoon batter in (thin layer).
  6. Add pepperoni slices on top.
  7. Close and cook 3–4 minutes until golden.
  8. Rest 1 minute for maximum crispiness.
  9. Serve with warm sugar-free pizza sauce for dipping.
