Ingredients:
- 1 lb extra-lean ground beef (96%), cooked and drained
- 6 oz reduced-fat refrigerated biscuits, cut into small pieces
(weighed for accuracy) - 1 packet reduced-sodium taco seasoning
- 1⅓ cups salsa (no sugar added)
- 2 cups diced bell peppers (any colors)
- 1 cup diced onion
- ¾ cup reduced-fat shredded cheese (use less, melts the same)
- Green onions, chopped
- Fat-free sour cream (optional, for topping)
Instructions:
- Cook ground beef in a skillet until browned. Stir in taco seasoning and simmer briefly.
- Preheat oven to 350°F. Spray a 9×13 casserole dish and set aside.
- Mix cooked beef with salsa in a bowl.
- Cut peppers, onion, and biscuits into bite-size pieces.
- Layer half the biscuits in the dish, then add half the beef mixture, veggies, and cheese.
- Repeat layers and finish with green onions.
- Cover loosely with foil and bake 30–35 minutes.
- Remove foil and bake 10–15 minutes, until bubbly and golden.
- Rest 5 minutes, slice into 6 servings, and serve with optional fat-free sour cream.
