WW Stuffed Pepper Soup (Low-Point & Super Filling)

🍲 Ingredients (Serves ~6)

  • Extra-lean breakfast turkey sausage (99% fat-free) – 1 lb
  • Frozen bell pepper & onion mix – 12 oz bag
  • Garlic – 2 cloves, minced
  • Vegetable broth – 2 cups (low sodium)
  • Marinara sauce – 1½ cups (look for no-sugar-added, low fat)
  • Diced tomatoes – 1 can (14.5 oz)
  • Frozen riced cauliflower – 10 oz bag
  • Dried basil – 1 tsp
  • Dried oregano – 1 tsp
  • Salt – ½ tsp
  • Black pepper – ½ tsp

Optional toppings

  • Fresh parsley
  • Reduced-fat shredded cheese (use lightly)

👩‍🍳 Instructions

1️⃣ In a large pot over medium heat, cook the turkey sausage with the frozen pepper and onion mix. Break it up as it cooks until browned and veggies are soft (about 8–10 minutes).
2️⃣ Add garlic and cook 1 minute until fragrant. No draining needed if using 99% lean.
3️⃣ Stir in broth, marinara, diced tomatoes, riced cauliflower, basil, oregano, salt, and pepper.
4️⃣ Bring to a gentle boil, then reduce heat and simmer 10 minutes until cauliflower softens.
5️⃣ Lower heat and simmer uncovered 20 more minutes to let everything come together.
6️⃣ Serve hot. Top with parsley and a light sprinkle of reduced-fat cheese if desired.
