WW Slow Cooker Chicken Spaghetti

🛒 Ingredients:

  • 2–3 boneless, skinless chicken breasts (0 pts)
  • 1 tsp onion powder (0 pts)
  • 1 tsp onion & herb seasoning (0 pts)
  • 1 can (10.5 oz) 98% fat-free cream of chicken soup (3 pts)
  • 1 can Rotel (diced tomatoes with green chilies) (0 pts)
  • 1 tbsp minced garlic (0 pts)
  • ¼ cup light sour cream (2 pts)
  • ½ cup reduced-fat Colby Jack cheese (4 pts)
  • 8 oz (½ lb) whole wheat or protein spaghetti noodles (4 pts per serving portioned out)

👩‍🍳 Directions:

  1. Load up the crockpot:
    Add chicken breasts, cream of chicken soup, Rotel, garlic, and seasonings. Stir a bit to coat.
  2. Cook slow & easy:
    Cover and cook on low for 6 hours (or high for 3–4 hours).
  3. Shred it up:
    Once cooked, shred or chunk the chicken right in the pot.
  4. Make it creamy:
    Stir in light sour cream and reduced-fat Colby Jack cheese until melted and smooth.
  5. Add your noodles:
    Boil spaghetti separately. You can either mix it all together in the crockpot or let everyone scoop their own — chef’s choice 😉
