Ingredients – Chicken:
- 2 boneless, skinless chicken breasts (halved)
- 3 tbsp grated Parmesan cheese
- 1/4 cup crushed high-protein breadcrumbs or lightly crushed cornflakes (instead of pork rinds)
- 1 egg (beaten)
- Salt & black pepper, to taste
- 1 spray olive oil or cooking spray
Ingredients – Creamy Garlic Sauce:
- 1 tsp light butter or olive oil
- 3 garlic cloves, minced
- 1/3 cup fat-free half & half or light cream
- 2 tbsp grated Parmesan cheese
- Salt & black pepper, to taste
Instructions:
- In a shallow bowl, mix Parmesan and breadcrumbs.
- Dip each chicken piece in beaten egg, then coat in the mixture.
- Lightly coat a skillet with cooking spray and cook chicken on medium heat until golden and cooked through (about 4–5 minutes per side).
- In another pan, melt light butter, sauté garlic until fragrant, add half & half and Parmesan, stirring until slightly thickened.
- Pour the creamy garlic sauce over the chicken and serve hot.
