WW Parmesan-Crusted Chicken with Creamy Garlic Sauce

High-Protein | Low-Carb | Serves 2

Ingredients – Chicken:

  • 2 boneless, skinless chicken breasts (halved)
  • 3 tbsp grated Parmesan cheese
  • 1/4 cup crushed high-protein breadcrumbs or lightly crushed cornflakes (instead of pork rinds)
  • 1 egg (beaten)
  • Salt & black pepper, to taste
  • 1 spray olive oil or cooking spray

Ingredients – Creamy Garlic Sauce:

  • 1 tsp light butter or olive oil
  • 3 garlic cloves, minced
  • 1/3 cup fat-free half & half or light cream
  • 2 tbsp grated Parmesan cheese
  • Salt & black pepper, to taste

Instructions:

  1. In a shallow bowl, mix Parmesan and breadcrumbs.
  2. Dip each chicken piece in beaten egg, then coat in the mixture.
  3. Lightly coat a skillet with cooking spray and cook chicken on medium heat until golden and cooked through (about 4–5 minutes per side).
  4. In another pan, melt light butter, sauté garlic until fragrant, add half & half and Parmesan, stirring until slightly thickened.
  5. Pour the creamy garlic sauce over the chicken and serve hot.
