For the chicken:
- 2 lbs bone-in, skinless chicken pieces (thighs or drumsticks)
- 1 cup buttermilk
- 1 tbsp Dijon mustard
- 2 tsp hot sauce
Dry coating:
- 2 cups crushed cornflakes
- ยฝ cup whole-wheat flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ยฝ tsp dried thyme
- Salt & pepper
For baking:
- Cooking spray (olive oil spray)

- Marinate
Mix buttermilk, Dijon, and hot sauce. Add chicken and marinate at least 4 hours or overnight. - Prep coating
Crush cornflakes into crumbs.
In another bowl, mix flour, paprika, garlic powder, onion powder, thyme, salt, and pepper. - Coat the chicken
Remove chicken from marinade (let excess drip off).
Coat each piece in the flour mix โ then press into the cornflakes. - Bake
Preheat oven to 400ยฐF (200ยฐC).
Place chicken on a pan lined with parchment or a wire rack.
