Ingredients:
- 1 box sugar-free orange Jell-O mix
- 1 cup boiling water
- 4 oz light cream cheese, very soft (use NeufchΓ’tel or fat-free if you prefer)
- 1 cup unsweetened fat-free Greek yogurt (instead of heavy cream)
- 3 tbsp light or sugar-free whipped topping (Cool Whip Light)
- Optional: a few drops of vanilla extract for a creamsicle vibe π¦
Directions:
- In a medium bowl, mix the orange Jell-O with boiling water until fully dissolved.
- Add the soft cream cheese and whisk or blend until smooth and creamy.
- Stir in the Greek yogurt β mix gently until combined (donβt whip).
- Fold in the light Cool Whip and mix well.
- Pour into small cups or a glass dish and refrigerate until firm (about 2β3 hours).
