This warm oatmeal bake is perfect for breakfast meal prep — soft, fruity, and naturally sweet without added sugar bombs! You can change the fruit every time, and it still tastes like a treat.
Ingredients (serves 6–8):
- 2 cups old-fashioned rolled oats
- 1½ cups unsweetened applesauce
- 2 large eggs
- 1 cup non-fat milk (or unsweetened almond milk)
- ½ tsp ground cinnamon
- ½ tsp vanilla extract
- 1 tsp baking powder
- ½ tsp salt
- ½ cup blueberries (or sliced banana, chopped apple, or raisins)
- 1 tbsp honey or sugar-free maple syrup (optional)
- Cooking spray
Instructions:
- Preheat oven to 350°F (175°C) and lightly spray an 8×8-inch baking dish.
- In a bowl, mix together oats, baking powder, cinnamon, and salt.
- In another bowl, whisk eggs, milk, applesauce, and vanilla until smooth.
- Combine wet and dry mixtures and fold in the fruit.
- Pour into the dish and smooth out evenly.
- Optional: drizzle with honey or syrup on top.
- Bake 35–40 minutes until golden and firm.
- Let cool, then slice into 6–8 servings.
