- 2 low-point flatbreads (1–2 pts each type if possible)
- 1 cup cooked shredded chicken breast
- 2 tbsp pesto (instead of ¼ cup — still plenty of flavor)
- ¾ cup reduced-fat mozzarella
- ¼ cup cherry tomatoes, halved
- 1 tbsp grated Parmesan (optional)
- Olive oil spray instead of drizzle
- Fresh basil
Instructions
1️⃣ Preheat oven to 425°F.
2️⃣ Spread 1 tbsp pesto on each flatbread.
3️⃣ Add chicken, mozzarella, tomatoes.
4️⃣ Light spray of oil if desired.
5️⃣ Bake 10–12 minutes until melted and golden.
