Ingredients
Brownie Layer:
- ½ cup unsweetened applesauce (replaces oil/butter)
- ½ cup unsweetened almond milk (or milk of choice)
- ½ cup unsweetened cocoa powder
- ½ cup erythritol or sugar substitute
- 2 eggs
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ tsp baking powder
- 1 cup oat flour
- ½ cup dark chocolate chips (optional)
Cheesecake Layer:
- 8 oz low-fat cream cheese, softened
- ¼ cup Greek yogurt
- ¼ cup erythritol or sugar substitute
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp cornstarch
Instructions
- Preheat Oven: 350°F (175°C). Grease or line a 9×9-inch pan.
- Make Brownie Layer: Mix applesauce, almond milk, and vanilla. Add cocoa, salt, baking powder, oat flour, and sweetener. Fold in chocolate chips if using. Pour into prepared pan.
- Make Cheesecake Layer: Beat cream cheese and Greek yogurt until smooth. Add sweetener, egg, vanilla, and cornstarch. Mix until creamy.
- Assemble: Pour cheesecake mixture over brownie layer. Spread evenly. Marble gently with a knife if desired.
- Bake: 25–30 minutes, until cheesecake layer is set and lightly golden.
- Cool: Let cool 10 min in pan, then transfer to wire rack. Slice into 12 portions.
