WW Low-Point Baked Spinach Mushroom Quesadillas

Ingredients (Low-Point Optimized)

  • 4 low-point large tortillas (1–2 pts each type if possible)
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • ½ onion, diced
  • 2 cloves garlic, minced
  • Olive oil spray (instead of 1 tbsp oil)
  • ¾ cup reduced-fat shredded cheese (keeps cheesy look but lowers points)
  • Salt & pepper

Instructions

1️⃣ Preheat oven to 400°F.
2️⃣ Spray skillet and sauté onion + garlic.
3️⃣ Add mushrooms + spinach; cook until tender. Season.
4️⃣ Lay a tortilla down, sprinkle cheese, add veggie mix, top with another tortilla. Repeat.
5️⃣ Bake 10–15 minutes until golden and melted.
6️⃣ Slice and serve.
