🥩 Ingredients

  • 2 lbs lean beef stew meat, trimmed of visible fat
  • 1 cup carrots, chopped
  • 1 tsp salt (or to taste)
  • 2 cloves garlic, chopped
  • 14 oz green chile, mild or hot
  • 1 tsp red chile powder
  • 24 oz hominy, canned and rinsed (about 1 can)
  • 4 cups low-sodium beef broth

Optional Toppings (add points if used):

👩‍🍳 Instructions

  1. Simmer the Beef
    In a large pot or Dutch oven, add beef, broth, salt, garlic, and carrots. Bring to a boil, then reduce heat and simmer gently for 1½–2 hours until meat is tender.
  2. Add the Flavor
    Stir in green chile and red chile powder. Simmer for 10 minutes to blend those rich, smoky flavors.
  3. Add the Hominy
    Add rinsed hominy and simmer another 20–25 minutes, until the stew thickens slightly and flavors come together.
  4. Serve Hot
    Spoon into bowls and top with fresh lime juice, cilantro, or a sprinkle of onion for that authentic kick.
