- 2 lbs lean beef stew meat, trimmed of visible fat
- 1 cup carrots, chopped
- 1 tsp salt (or to taste)
- 2 cloves garlic, chopped
- 14 oz green chile, mild or hot
- 1 tsp red chile powder
- 24 oz hominy, canned and rinsed (about 1 can)
- 4 cups low-sodium beef broth
Optional Toppings (add points if used):

- Simmer the Beef
In a large pot or Dutch oven, add beef, broth, salt, garlic, and carrots. Bring to a boil, then reduce heat and simmer gently for 1½–2 hours until meat is tender. - Add the Flavor
Stir in green chile and red chile powder. Simmer for 10 minutes to blend those rich, smoky flavors. - Add the Hominy
Add rinsed hominy and simmer another 20–25 minutes, until the stew thickens slightly and flavors come together. - Serve Hot
Spoon into bowls and top with fresh lime juice, cilantro, or a sprinkle of onion for that authentic kick.
