WW Glazed Chicken Rice Bowl

Ingredients:

For the Chicken:

  • 2 boneless skinless chicken breasts, diced
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp honey (reduced from 1 tbsp — glaze still works)
  • 2 tbsp low-sodium soy sauce
  • Cooking spray (instead of oil)

For the Broccoli:

  • 2 cups broccoli florets
  • Cooking spray
  • Salt & pepper, to taste

For the Bowl:

  • ¾ cup cooked white rice (total, not per bowl)
  • 1 cucumber, thinly sliced
  • ¼ avocado, mashed (total)
  • Pinch of salt

Instructions:

  1. Cook the Chicken
    Heat a nonstick skillet with cooking spray over medium heat.
    Add chicken and cook 5–7 minutes until lightly browned.
    Stir in garlic, paprika, soy sauce, and honey.
    Cook another 3–5 minutes until sticky and glazed. Remove from heat.
  2. Cook the Broccoli
    Toss broccoli with cooking spray, salt, and pepper.
    Roast at 400°F (200°C) for about 15 minutes or sauté until tender with a little char.
  3. Assemble the Bowls
    Divide rice between two bowls.
    Top with glazed chicken, broccoli, cucumber slices, and mashed avocado.
    Finish with a pinch of salt on the avocado.
