For the Garlic Parmesan Zucchini:

  • 2–3 medium zucchinis, sliced into ½-inch rounds — 0 points
  • 1 tsp olive oil (or use olive oil spray generously) — 1 point
  • 2 cloves garlic, minced — 0 points
  • 2 tbsp grated Parmesan cheese — 2 points
  • 1 tsp Italian seasoning — 0 points
  • Salt and pepper to taste — 0 points
  • Optional: chopped parsley — 0 points

For the Bowl Base:

  • 1 cup cooked brown rice (or cauliflower rice for 0 points!) — 3 points for brown rice / 0 for cauliflower rice
  • ¾ cup steamed broccoli florets — 0 points
  • Optional: squeeze of lemon juice or splash of low-sodium soy sauce — 0 points

👩‍🍳 Instructions

  1. Prepare the Base:
    Cook rice or cauliflower rice according to package directions. Steam broccoli until tender, about 4–6 minutes.
  2. Roast the Zucchini:
    Preheat oven to 425°F (220°C).
    Toss zucchini with olive oil (or spray), garlic, Italian seasoning, salt, and pepper.
    Arrange in a single layer on a parchment-lined baking sheet.
    Sprinkle Parmesan cheese evenly on top.
    Roast for 15–18 minutes until golden and crisp on the edges.
  3. Assemble Your Bowl:
    Add rice or cauliflower rice to a bowl.
    Top with roasted zucchini and steamed broccoli.
    Garnish with parsley or crushed red pepper if you like a little kick.
