WW Garlic Butter Salmon with Spinach & Mushrooms

Ingredients

Salmon

  • 4 skinless salmon fillets (4–5 oz each)
  • 1 tbsp light butter
  • 1 tsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • Salt & pepper

Creamy Sauce

  • 2 tsp light butter
  • 1 tsp minced garlic
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • ½ cup unsweetened almond milk
  • ¼ cup fat-free half & half (or low-fat milk)
  • 2 tbsp grated Parmesan
  • 1 tsp cornstarch + 1 tbsp water (optional)
  • Salt & pepper
  • Optional: red pepper flakes or parsley

Instructions

  1. Season salmon with garlic powder, paprika, salt, and pepper.
  2. Heat olive oil + 1 tbsp light butter in a nonstick skillet. Sear salmon 4–5 min per side until golden. Remove and set aside.
  3. In the same pan, add remaining butter and garlic. Sauté 30 seconds.
  4. Add mushrooms and cook until soft and lightly browned.
  5. Stir in spinach and cook until wilted.
  6. Pour in almond milk and half & half. Simmer gently.
  7. Add cornstarch slurry if using, then Parmesan. Stir until creamy.
  8. Return salmon to pan, spoon sauce over top, simmer 1–2 minutes.
  9. Garnish and serve.
