🥗 Ingredients (2 servings):
- 4 ripe tomatoes (any kind you love)
- ½ small red onion, thinly sliced
- ½ cucumber, sliced or diced
- A handful of fresh basil leaves, chopped
- 1 tsp olive oil
- 1 tsp red wine vinegar (or lemon juice)
- ½ tsp Dijon mustard
- ½ tsp honey (optional, for balance)
- Salt & pepper to taste
- (Optional: 1 tbsp light feta or mozzarella pearls for extra creaminess)

1️⃣ Chop tomatoes and cucumber, and thinly slice the onion.
2️⃣ In a small bowl, whisk olive oil, vinegar, mustard, honey, salt, and pepper.
3️⃣ Toss everything together in a large bowl with basil.
