Light, juicy, and sunshine in a bowl — this salad proves that simple can still taste amazing!
It’s the perfect quick lunch, side for dinner, or “I’m-too-tired-to-cook” solution that’s fresh, filling, and WW-friendly. 💙


🥗 Ingredients (2 servings):

  • 4 ripe tomatoes (any kind you love)
  • ½ small red onion, thinly sliced
  • ½ cucumber, sliced or diced
  • A handful of fresh basil leaves, chopped
  • 1 tsp olive oil
  • 1 tsp red wine vinegar (or lemon juice)
  • ½ tsp Dijon mustard
  • ½ tsp honey (optional, for balance)
  • Salt & pepper to taste
  • (Optional: 1 tbsp light feta or mozzarella pearls for extra creaminess)

👩‍🍳 Instructions:
1️⃣ Chop tomatoes and cucumber, and thinly slice the onion.
2️⃣ In a small bowl, whisk olive oil, vinegar, mustard, honey, salt, and pepper.
3️⃣ Toss everything together in a large bowl with basil.
4️⃣ Let it sit for 5–10 minutes so the flavors really pop.
