Ingredients:
- 1 cup reduced-fat graham cracker crumbs
- 2 tbsp light butter, melted
- 8 oz light cream cheese (Neufchâtel)
- 1/4 cup sugar substitute (monk fruit/erythritol)
- 1/4 cup nonfat Greek yogurt
- 1/2 cup sugar-free vanilla pudding
- 1 ripe banana, thinly sliced
- 1/4 cup crushed reduced-fat Nilla wafers
- 1/2 tsp vanilla extract
Steps:
- Mix graham crumbs + butter → press into molds.
- Beat cream cheese + sweetener + Greek yogurt + vanilla until creamy.
- Layer: crust → pudding → banana slice → cheesecake filling.
- Roll tops in crushed wafers.
- Chill 2 hrs before serving.
