Ingredients

Meatballs

  • 1 lb 99% lean ground turkey
  • โ…“ cup quick oats or whole wheat breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • ยผ tsp salt
  • ยผ tsp black pepper

Casserole

  • 2 cups whole wheat penne, uncooked
  • 2ยฝ cups no-sugar-added marinara sauce
  • ยฝ cup reduced-fat shredded mozzarella
  • ยผ cup grated Parmesan
  • ยฝ cup low-sodium chicken broth
  • ยผ cup finely diced onion
  • ยฝ tsp crushed red pepper flakes (optional)

Instructions

  1. Make meatballs:
    In a bowl, gently mix all meatball ingredients. Form into 18โ€“20 small meatballs.
  2. Optional browning:
    Lightly brown meatballs in a nonstick skillet for extra flavor (optional).
  3. Assemble:
    Spray slow cooker. Add uncooked pasta, marinara, and broth. Stir to coat pasta.
  4. Add meatballs:
    Place meatballs on top. Sprinkle diced onion and red pepper flakes if using.
  5. Cook:
    • LOW: 6โ€“7 hours
    • HIGH: 3โ€“4 hours
      Avoid stirring early so meatballs keep their shape.
  6. Cheese finish:
    Sprinkle mozzarella and Parmesan on top during the last 15โ€“20 minutes. Cover until melted.
  7. Rest:
    Let sit uncovered for 10 minutes before serving.
