Ingredients (serves 8)

  • 4–5 large russet potatoes, peeled & thinly sliced
  • 1 ½ cups unsweetened almond milk (0 points)
  • 1 cup nonfat plain Greek yogurt (0 points)
  • 2 cloves garlic, minced (0 points)
  • 1 tsp dried thyme (0 points)
  • 1 tsp salt (0 points)
  • ½ tsp black pepper (0 points)
  • 1 cup reduced-fat shredded cheddar cheese (8 points total)
  • ¼ cup grated Parmesan cheese (3 points total)
  • Fresh thyme leaves, for garnish (0 points)

Instructions

  1. Preheat oven to 375°F (190°C). Spray a 9×13-inch baking dish with cooking spray.
  2. In a saucepan, whisk almond milk, Greek yogurt, garlic, thyme, salt, and pepper. Heat gently until warm (don’t boil).
  3. Arrange a layer of potatoes in the dish. Pour some of the cream mixture over, then sprinkle a little cheddar.
  4. Repeat layering, finishing with cheese on top.
  5. Cover with foil and bake 40 minutes.
  6. Remove foil, sprinkle Parmesan, and bake uncovered for 20–25 minutes, until golden and bubbly.
  7. Let rest a few minutes, garnish with thyme, and serve.
