- 4–5 large russet potatoes, peeled & thinly sliced
- 1 ½ cups unsweetened almond milk (0 points)
- 1 cup nonfat plain Greek yogurt (0 points)
- 2 cloves garlic, minced (0 points)
- 1 tsp dried thyme (0 points)
- 1 tsp salt (0 points)
- ½ tsp black pepper (0 points)
- 1 cup reduced-fat shredded cheddar cheese (8 points total)
- ¼ cup grated Parmesan cheese (3 points total)
- Fresh thyme leaves, for garnish (0 points)
Instructions
- Preheat oven to 375°F (190°C). Spray a 9×13-inch baking dish with cooking spray.
- In a saucepan, whisk almond milk, Greek yogurt, garlic, thyme, salt, and pepper. Heat gently until warm (don’t boil).
- Arrange a layer of potatoes in the dish. Pour some of the cream mixture over, then sprinkle a little cheddar.
- Repeat layering, finishing with cheese on top.
- Cover with foil and bake 40 minutes.
- Remove foil, sprinkle Parmesan, and bake uncovered for 20–25 minutes, until golden and bubbly.
- Let rest a few minutes, garnish with thyme, and serve.
