Ingredients:

  • 1 lb extra-lean ground beef or ground turkey – 0 pts
  • 3 bell peppers, sliced (mix colors for a bright dish!) – 0 pts
  • 1 medium onion, sliced – 0 pts
  • 2 oz light cream cheese – 2 pts
  • 3 slices reduced-fat provolone, torn – 2 pts
  • 1/4 cup low-sodium chicken broth – 0 pts
  • Seasonings: salt, pepper, Italian seasoning, smoked paprika, garlic powder – 0 pts

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Cook the meat in a skillet over medium heat. Drain any excess fat.
  3. Add onions and bell peppers; sauté until soft.
  4. Stir in light cream cheese and chicken broth until creamy. Add seasonings.
