Ingredients (4 servings):
- 4 skinless, boneless chicken breasts, pounded thin – 0 points
- ½ tsp salt
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ cup whole wheat panko breadcrumbs – 2 points
- 2 Tbsp flour (can use whole wheat or almond flour) – 1 point
- 1 large egg, beaten with 2 Tbsp skim milk – 1 point
- Olive oil spray – 0 points
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment and lightly spray with olive oil spray.
- Mix flour, paprika, garlic powder, onion powder, salt, and pepper in a bowl.
- Dip each chicken breast first into the flour mix, then into the egg mixture, then coat with panko breadcrumbs.
- Place chicken onto baking sheet. Spray tops lightly with olive oil spray to help crisp.
- Bake 20–25 minutes, flipping halfway, until chicken is golden and cooked through (165°F inside).
