Ingredients (makes 12 muffins)
For the Muffins:
- 1 cup low-fat or non-fat cottage cheese (240 g)
- ½ cup almond flour (60 g)
- ¼ cup coconut flour (30 g)
- 4 large eggs
- ¼ cup unsalted butter (60 g), melted
- 1 tsp vanilla extract
- ½ tsp baking powder
- ¼ tsp salt
For the Cinnamon Swirl:
- 2 tbsp unsalted butter (30 g), softened
- 2 tbsp granulated erythritol (or preferred low-calorie sweetener)
- 1 tbsp ground cinnamon
Optional Garnish:
- 2 tbsp chopped nuts (pecans or walnuts)
- Light sprinkle of extra erythritol-cinnamon mix
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease lightly.
- Mix dry ingredients: In a medium bowl, combine almond flour, coconut flour, baking powder, and salt.
- Mix wet ingredients: In a large bowl, blend cottage cheese, eggs, melted butter, and vanilla until smooth.
- Combine: Gently stir dry ingredients into wet ingredients until just combined (don’t overmix).
- Make cinnamon swirl: In a small bowl, mix softened butter, erythritol, and cinnamon until spreadable.
- Assemble muffins: Fill muffin cups about 2/3 full with batter. Drop a small dollop of cinnamon swirl on top of each and use a toothpick to gently swirl it into the batter.
- Add garnish: If desired, sprinkle chopped nuts or extra cinnamon mix on top.
- Bake for 18-20 minutes, or until golden and a toothpick inserted comes out clean.
- Cool: Let muffins cool in the pan 5 minutes, then transfer to a wire rack to cool completely.
