A warm, comforting classic that’s rich in flavor but light on points!
Ingredients (serves 6–8):
- 2 tsp olive oil (for cooking onions)
- 6 large yellow onions, thinly sliced
- 1/2 tsp granulated sugar (optional, helps caramelize)
- 2 garlic cloves, chopped
- 1/2 cup dry white wine or dry sherry
- 8 cups low-sodium beef or vegetable broth
- 1 bay leaf
- 3 sprigs fresh thyme (or 1/4 tsp dried thyme)
- Salt & black pepper, to taste
- 12 slices baguette, lightly toasted (use whole wheat for lower points)
- 1 1/2 cups shredded Gruyere cheese (use reduced-fat to save points)
Instructions:
- Heat olive oil in a large pot over medium-high heat. Add sliced onions and cook uncovered for 10 minutes.
- Sprinkle sugar over onions and continue cooking 30–40 minutes, stirring often, until golden and caramelized.
- Add garlic and sauté 1 minute. Pour in white wine or sherry to deglaze the pan, scraping the bottom. Cook 3 minutes.
- Add broth, bay leaf, thyme, and 1 tsp salt. Partially cover and simmer 30 minutes. Adjust seasoning with remaining salt & pepper.
- Preheat oven to 400°F (200°C). Brush baguette slices lightly with olive oil, bake 6–8 minutes until golden.
- Sprinkle half the Gruyere on bread slices, bake 2–3 minutes until melted.
- Ladle soup into bowls, top with remaining Gruyere, add a slice of cheese-topped crouton, and garnish with fresh thyme.
