Ingredients

Crust:

  • 1ยฝ cups crushed graham crackers
  • 2 tbsp unsalted butter, melted
  • 2 tbsp sugar substitute

Filling:

  • 24 oz fat-free cream cheese, softened
  • 2/3 cup sugar substitute
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/4 cup fat-free sour cream
  • 1/4 cup fat-free Greek yogurt

Cherry Topping:

  • 2 cups fresh or frozen cherries, pitted
  • 1/4 cup sugar substitute
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 tsp lemon juice

Instructions

  1. Prepare crust: Mix graham crackers, butter, and sugar substitute. Press into 9-inch springform pan. Bake 10 min at 325ยฐF (160ยฐC). Cool.
  2. Make filling: Beat cream cheese and sugar substitute until smooth. Add eggs one at a time, then stir in vanilla, sour cream, and Greek yogurt.
  3. Bake cheesecake: Pour filling over cooled crust. Bake 50โ€“60 min until edges set and center slightly jiggles. Cool completely, then refrigerate 4+ hours.
  4. Cherry topping: Cook cherries, sugar substitute, lemon juice over medium heat. Mix cornstarch and water, add to cherries, cook until thickened. Cool.
  5. Assemble: Pour cherry topping over chilled cheesecake. Slice and serve!
